Sunny's Easy Loaded Baked Potato Casserole

A side dish for one, turned into a side dish for everyone at the table, is the move for a perfect weeknight meal. No need to bake plenty of individual potatoes and then bake them again with this trusty way to steakhouse heaven.

  1. For the potatoes: Preheat the oven to 400 degrees F. Grease an 8-inch square baking dish with cooking spray.
  2. In a large bowl, add the potatoes, butter, cream cheese, yogurt and onion pulp. Mash together until the desired texture; I prefer as smooth as possible. (Use a hand mixer if desired.) Taste and season with salt and a few grinds of black pepper. Fold in the scallions, cheese and bacon. Pour into the prepared baking dish.
  3. For the topping: Top the dish with the fried onions, bacon and cheese. Bake for 20 to 25 minutes. Serve warm with a dollop of Greek yogurt.
