Sweet Tomato Chutney

1/2 cup sugar

1/2 teaspoons salt

4 to 6 cardamom pods, cracked

2 large tomatoes, chopped

1 tablespoon chopped fresh cilantro

1 tablespoon minced red onion


  1. Put the sugar, salt, cardamom and tomatoes into a saucepan over high heat and bring to a boil.
  2. Reduce the heat to low and simmer gently until it has reduced and thickened significantly, 45 minutes to1 hour. Let cool slightly and stir in the cilantro and onions.
