Taylor Ham, Egg and Cheese Biscuit

  1. For the biscuits: With a cheese grater, grate the pound of butter onto a sheet tray and freeze for 1 hour.
  2. Preheat the oven to 435 degrees F.
  3. In a large bowl, sift together the baking powder, salt, baking soda and 6 cups flour. Add the frozen butter. Mix for 10 seconds to coat the butter with the flour mixture.
  4. Add the buttermilk to the bowl, then mix for approximately 30 seconds with your hands.
  5. Dust the work surface with the remaining 1/2 cup flour. Dump the contents of the bowl onto the work surface. Flatten the mixture with your hands into roughly a 12-by-14-inch rectangle. (It is important to note that your mixture will not be consistent or homogeneous; it should look lumpy, wet and dry in some areas.) With a rolling pin and a bench scraper in each hand, perform a business letter fold three times, each time rolling out the dough to approximately 1/2 inch. Your dough should be sticky. You can dust your hands and rolling pin with flour at each fold. With every consecutive fold, the dough will become smoother, and resemble a typical biscuit dough. Cut the biscuits into 2-by-3-inch rectangles.
  6. Line a sheet tray with parchment paper and arrange the biscuits on the tray. Brush the melted butter over the top of the biscuits. Top each biscuit with a pinch of sea salt.
  7. Bake until the internal temperature registers 188 degrees F, 25 to 35 minutes in a conventional oven or 13 to 16 minutes in a convection oven. Let rest for 5 minutes.
  8. For the sandwich: Fry the egg and season it. Fry the pork roll alongside. Melt the cheese on the egg. Assemble the sandwich on a biscuit smeared with pepper jelly, if using, and enjoy! (Save the remaining biscuits for another use.)
