There’s a great divide in the Garden State: Northerners call the meat in this sandwich “Taylor ham” and folks in South and Central Jersey call it “pork roll.” The debate can get pretty heated, so watch what you say when you’re ordering breakfast in New Jersey!

Directions
Melt half of the butter in a large nonstick skillet over medium-high heat. Add the ham slices and press firmly with a metal spatula to sear and lightly crisp, about 2 minutes. Flip and sear 1 to 2 more minutes. Remove the ham to a plate. Add the roll to the skillet cut-side down and lightly toast, 1 to 2 minutes. Remove and add the ham to the bottom of the roll. Remove the skillet from the heat to cool slightly.
Melt the remaining butter in the same skillet over medium heat. Crack the eggs into the skillet and season lightly with salt and pepper. Cook until the eggs are set on the bottom, 1 to 2 minutes. Carefully flip the eggs and top each with a slice of cheese. Cover the skillet and cook until the egg whites are set but the yolks are still slightly runny and the cheese is melted, 2 to 3 minutes.
Top the ham with the eggs, ketchup and the roll top. Cut the sandwich in half with a serrated knife.
