a mortar and pestle
Hand chop around the papaya and slice the threads. (You may use a tool to get strips of papaya instead of hand chopping.) Leave in a straining bowl to allow excess moisture to come out.
In a mortar and pestle, combine the dried shrimp, sugar, MSG if using, garlic and Thai chiles. Mash together until the garlic is fully incorporated. Add the lime juice, fish sauce and palm sugar. Continue to mix and mash until you create a liquid dressing and all the palm sugar is dissolved. Cut the cherry tomatoes in half and add along with the roasted peanuts and crush the peanuts slightly. Add the shredded green papaya and mix thoroughly.
