1 Granny Smith apple, thinly sliced into half-moons

1/2 cup apple brandy, such as calvados

1/2 cup good-quality apple juice 

One 750-milliliter bottle Champagne or prosecco, chilled 


  1. Refrigerate 8 coupe glasses until chilled. Place a slice of apple in each glass.
  2. Fill a cocktail shaker with ice. Pour in the brandy and juice and shake vigorously to chill.
  3. Strain the mixture into the glasses (about 2 tablespoons per glass) and top off each with 1/2 cup Champagne.
