Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onions and bell peppers and cook, stirring occasionally, until they start to soften, 5 to 6 minutes. Transfer the onions and bell peppers to a plate and set aside.
Add the remaining 1 tablespoon oil, the chicken, 1/2 of the fajita seasoning and 1/2 teaspoon of salt and cook, stirring occasionally, for 2 minutes.
Return the onions and bell peppers to the skillet. Add the remaining 1/2 of the fajita seasoning and another 1/2 teaspoon of salt and cook, stirring occasionally, until the chicken is cooked through, about 2 minutes. Add the lime juice and cilantro to the skillet and stir to combine.
Serve with the tortillas and desired accompaniments.
