Caramel Torte

Stack nine ice cream sandwiches into three layers (so there are three sandwiches per layer) and cover with whipped topping. Use a piping bag to pipe decorative stars of whipped topping on top. Drizzle liberally with caramel sauce and sprinkle with chopped nuts and chocolate chips. The result is a deceptively fancy dessert that mimics the look of an icebox cake.

Blend five ice cream sandwiches, two scoops of vanilla ice cream and 2 ounces dark rum or bourbon until well combined (skip the booze to make the drink kid-friendly). Pour into two, 12-ounce glasses and garnish each with whipped cream, a cherry and an ice cream sandwich quarter.

Grasshopper Pie

Soften a 1 1/2-quart tub of mint chip ice cream and fold in three ice cream sandwiches, cut into small cubes. Pour into a ready-made 9-inch chocolate graham pie shell. Freeze until solid. Top with whipped cream and chocolate sprinkles, if desired. When sliced, the ice cream sandwich pieces will be a fun surprise peeking through all that green.
