1/2 onion, peeled, finely diced

1/2 teaspoon ground garlic

2 bay leaves

1 tablespoon salt

2 tablespoons butter

1 pound barley

6 cups chicken stock


  1. Barley: Cook onion, garlic, bay leaves, and salt in butter until onions are soft, do not color. Add barley and chicken stock and cook until barley is tender.
  2. Serve barley with Braised Beef Shank
