Green Beans with Toasted Pine Nuts

2 pounds haricots verts or green beans

3/4 cup pine nuts, toasted and finely chopped

5 tablespoons olive oil

Salt and freshly ground black pepper


  1. Cook beans in a large pot of boiling salted water until crisp tender. Drain and rinse with cold water. Heat oil in a large saute pan over medium heat. Add the green beans and cook until just heated through, stir in pine nuts and season with salt and pepper to taste.
