California Avocado Fries

Special equipment:
a deep-fryer or deep-fry thermometer
  1. Heat the oil to 350 degrees F in a deep-fryer or a Dutch oven fitted with a deep-fry thermometer.
  2. Whisk together the eggs in a bowl. Add the flour, paprika, Cajun seasoning, onion powder, seasoning salt, baking powder, cayenne, salt and pepper.
  3. Slowly add the beer. Continue to whisk until smooth. Coat each avocado wedge thoroughly, shaking off any excess batter. In a separate wide bowl, place the wedges in the panko until completely covered. (Be sure to minimize clumping of batter or breading.) Place each wedge into the oil. Fry until lightly crisp and golden brown in color, 3 to 5 minutes.
  4. Squeeze lemon or lime on top to enhance flavors. Dip in sauce, if desired.

Sour Cream Lime:

  1. Whisk together the sour cream, lime zest and juice, cilantro, cumin, salt and cayenne in a bowl. Keep refrigerated.

Chipotle Ranch:

  1. In blender, place the dressing, lime juice, salt and chiles. Cover and blend until smooth. Keep refrigerated.
