California Burgers with Sweet Potato Fries

This yummy dish is all about having your meat and your veggies too! We've ditched the traditional burger bun for sturdy lettuce leaves here and packed the burger with a refreshing combo of fresh veggies and ground beef. It’s truly the best of both worlds!

  1. Bake the sweet potato fries as the label directs. Meanwhile, combine the beef, scallions, 3/4 teaspoon salt and a few grinds of pepper in a large bowl; mix well. Form the mixture into 4 equal patties, 3 1/2 to 4 inches wide. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the patties and cook until browned, about 3 minutes. Flip and cook to medium doneness, another 2 minutes.
  2. Divide the lettuce leaves among plates, layering a few leaves to create 2 “buns” per plate. Put a burger on one of the lettuce buns on each plate. Top each with 2 tablespoons hummus, slices of the cucumber, beets, radishes and avocado and some sprouts. Serve with the sweet potato fries.
