These homemade ice pops are full of delicious and healthy ingredients. Citrus is full of vitamin C and ginger is great for your stomach and gut; plus, they are lightly sweetened with floral honey (local is best!) — perfect for both kids and grownups.

Special equipment:
cheesecloth; a 10-cavity popsicle mold
Using a vegetable peeler, remove the zest of the lemons and orange and add to a small saucepan. Juice the fruit to yield 3/4 cup total, then set aside. Add the ginger to the pan and cover with 3 1/2 cups filtered water. Bring to a boil, then reduce to a simmer until 2 1/2 cups liquid remain, 10 to 12 minutes. Cut the heat and allow it to steep for 10 minutes.
Remove the ginger and zest, then strain the mixture through a sieve lined with cheesecloth into a liquid measuring cup. Add the citrus juice and honey, then mix well to dissolve.
Pour the mixture into a 10-cavity popsicle mold, adding a lemon slice to each before topping with the stick. Freeze for 8 hours or up to overnight.
