  1. Divide the meat into five portions, each about 3 ounces, and roll into patties. Rest the patties in the refrigerator for 15 minutes. Heat a griddle to 280 to 325 degrees F.
  2. Place the patties on the griddle. Top each patty with the very thinly sliced Spanish onions. Press or tap gently; putting too much pressure on the patty results in loss of juices and can cause the cheeseburger to be dry. Once the patties are cooked to your liking on one side, flip them over and top with 2 slices of American cheese per patty. Quickly place the potato roll on top of the cheese so that the cheese melts gently. The steam from the meat and cheese moistens the potato rolls to perfection. Check for your level of doneness and enjoy with thinly sliced pickles while piping hot.
