This healthy version of puppy chow is just as satisfying as the original sweet snack but has less added sugar. The chocolatey coating includes almond butter instead of the traditional peanut butter, and we toss the coated cereal with unsweetened coconut instead of confectioners’ sugar to finish. It just may become your new go-to quick snack.

Directions
Line 2 baking sheets with foil and set aside.
Microwave the chocolate chips, almond butter and butter in a medium microwave-safe bowl in 30-second intervals until completely melted, 1 to 2 minutes. Mix together with a spatula until smooth. Stir in the vanilla and salt until combined.
Put the rice cereal in a large bowl and pour the chocolate mixture on top. Gently mix the cereal and chocolate with a spatula until the cereal is completely covered, taking care not to break the cereal.
Add 1 1/2 cups of the shredded coconut to a resealable bag. Add half of the cereal mixture to the bag, close and toss to coat. Pour the coated cereal onto one of the prepared baking sheets. Repeat with the remaining shredded coconut and cereal mixture. Allow to fully cool on the baking sheets before serving.
Cook’s Note
The mixture can be refrigerated in an airtight container for up to 1 week or frozen for up to 1 month.
