While most people think of roasting butternut squash in the oven, the slow cooker is an overlooked and incredibly easy way to turn this popular fall vegetable into a side dish. Just toss the squash with butter, brown sugar and spices and let it cook unattended for a couple of hours. Top with a sprinkling of pumpkin and sesame seeds for the perfect crunchy, nutty finish.

Special equipment:
a 6-quart slow cooker
Lay out the butter slices in a 6-quart slow cooker, cover and set to cook on high. When melted, after about 12 minutes, add the squash chunks. Scatter the brown sugar, chili powder, cinnamon, 1 1/2 teaspoons salt and a few grinds of pepper on top. Stir until evenly coated. Cover and continue cooking on high until the squash is tender when pierced with a paring knife but not falling apart, about 2 hours.
Remove the squash chunks to a large serving platter using a slotted spoon, draining off the cooking liquid. Season the squash with more salt and pepper if needed. Transfer 3 tablespoons of the cooking liquid to a small bowl. Add the honey and vinegar and stir until fully combined. Spoon this mixture evenly over the squash and top with a generous sprinkle of pumpkin seeds and sesame seeds.
