Sweet, chewy dates are stuffed with savory Manchego, then wrapped in salty soppressata in these Charcuterie-inspired hors d’oeuvres. A final drizzle of honey and sprinkle of chopped nuts brings a touch of sweetness and crunch. We prefer pitting our own dates for this recipe, as pre-pitted ones tend to be less juicy than whole ones. However, pitted dates will work in a pinch.
Preheat the oven to 400 degrees F. Line a baking sheet with parchment.
Slice into the dates lengthwise, just deep enough to remove the pits with your fingers; discard the pits. Insert a piece of Manchego into each date. Wrap a slice of soppressata around each date, with the ends meeting at the bottom, and secure with a toothpick. Place the stuffed dates on the lined baking sheet.
Bake until the cheese is melted and bubbly and the soppressata has crisped slightly, about 10 minutes. Drizzle the dates with the honey, then sprinkle with the almonds. Continue to bake until the nuts are toasted, 4 to 5 minutes.
Garnish the dates with the thyme leaves and set aside to cool slightly before serving.
Cook’s Note
As Manchego ages, its texture changes and becomes less ideal for melting. For the optimal gooey filling, shoot for Manchego that’s been aged for no longer than 6 months.
