Steamed cauliflower coated in a luscious cheddar cheese sauce is a classic, rich side dish. This lighter version involves roasting cauliflower florets until browned and tender. A handful of shredded cheese is sprinkled over the top and becomes cracker-crisp for just a pop of salty flavor.

Directions
Toss 1 small head cauliflower (cut into florets) with 2 tablespoons olive oil, 1 teaspoon Old Bay and a pinch of salt. Bake on a preheated rimmed baking sheet at 450 degrees F, tossing once, until browned and tender, 25 to 30 minutes. Sprinkle with 3/4 cup finely shredded cheddar cheese and bake until melted, browned and crisp in spots, 5 to 7 minutes. Top with sliced scallions.
