Chicken and Broccoli Stir-Fry Kebabs

Chicken and broccoli is an iconic Chinese American takeout dish with a savory, saucy gravy coating velveted chicken and crisp broccoli. This recipe skewers chicken, broccoli and carrots together and cooks them over the grill for the smoky char flavor you’d get from a wok. Each skewer get glazed with a fermented black bean sauce that adds umami and savory flavors. You can purchase fermented black beans (sometimes called salted black beans) in Asian grocery stores and online. Make sure to rinse the black beans to remove some of the saltiness.

  1. Soak 8 wooden skewers (10 to 12 inches long) in water for 30 minutes.
  2. Preheat a grill to medium and oil the grates. Combine the chicken, 2 tablespoons cold water, 1 tablespoon each oyster sauce, cornstarch and vegetable oil and 1 teaspoon salt in a medium bowl and toss until the chicken is evenly coated; set aside. Toss the broccoli and carrots with 1 tablespoon vegetable oil in a large bowl; set aside.
  3. Whisk together 1/2 cup cold water, the remaining 1 tablespoon cornstarch and 1 teaspoon oyster sauce, the soy sauce, sugar, rice wine and sesame oil in a medium bowl until the cornstarch is dissolved. Heat the remaining 1 tablespoon vegetable oil in a small saucepan over medium heat. Add the black beans, ginger and garlic and cook until fragrant, about 2 minutes. Add the soy sauce mixture and cook, whisking constantly, until thick like honey, about 3 minutes. Set aside.
  4. Thread the chicken, broccoli and carrots onto the skewers, alternating ingredients. Grill the kebabs, covered, turning as needed, until the chicken is browned and cooked through, 15 to 20 minutes; lightly brush with the black bean sauce after about 1 minute. (If the sauce gets too thick, stir in warm water, 1 tablespoon at a time, to thin it.) Transfer to a platter and brush with the remaining sauce. Serve with rice.
