Spicy, smoky and cheesy, these chipotle shrimp quesadillas are made entirely on the grill — perfect for a laid-back summer meal. The shrimp are simply marinated in chipotle peppers in adobo and orange juice, then quickly grilled to develop a light char and bold flavor. They’re tucked into tortillas with Monterey Jack cheese and grilled over medium heat for the ideal balance of crispy, toasty exterior and melty interior. Serve with a refreshing pineapple salsa and slices of avocado to cool things down.

Directions
Preheat a grill to medium-high. Toss the shrimp with 1 teaspoon salt in a large bowl. Add 2 tablespoons vegetable oil, the mashed chipotles and orange juice; toss to evenly combine.
Make the salsa: Combine the pineapple, cilantro, white onion and lime juice in a medium bowl. Mix well and season with salt to taste. Refrigerate until ready to serve.
Grill the shrimp until pink and opaque, 2 to 3 minutes per side. Reduce the heat to medium for the quesadillas.
Brush the tortillas on 1 side only with the remaining tablespoon of vegetable oil. Flip the tortillas and spread the cheese on the other side. Divide the shrimp among the tortillas, then fold them in half, gently pressing as needed to keep them closed.
Grill the quesadillas until browned and crisp on the outside and the cheese is melted, 1 1/2 to 3 minutes per side. Serve with the pineapple salsa and avocado slices.
