This grilled shrimp recipe highlights apples in two ways. Apple cider is reduced with vinegar and spice until glazy, then it gets brushed on shrimp as it grills. A cool and crunchy salad of thinly sliced apple and kohlrabi topped with toasty breadcrumbs is the perfect salad base for this dinner for apple lovers.

Directions
Combine the apple cider, vinegar and 1/8 teaspoon cinnamon in a medium saucepan. Bring to a boil, then reduce the heat to medium and simmer until the mixture is syrupy and reduced to about 1/3 cup, 25 to 30 minutes. Remove from the heat and let cool slightly, then whisk in 2 teaspoons mustard.
Meanwhile, mix together the panko, 2 tablespoons olive oil, 1/2 teaspoon each salt and pepper and the remaining 1/8 teaspoon cinnamon in a large skillet over medium heat. Cook, stirring occasionally, until the panko is toasted and golden, 3 to 4 minutes. Transfer to a small bowl.
Preheat a grill to medium. Make the dressing: Whisk together the remaining 1/4 cup olive oil and 1 teaspoon mustard, the lemon juice and honey in a large bowl until combined; season with salt and pepper.
Thread the shrimp onto skewers (if using wooden skewers, soak them in water for 20 minutes first to prevent scorching). Season the shrimp with salt and pepper. Oil the grill grates, then grill the shrimp skewers until pink on the bottom, about 1 minute. Flip, brush the shrimp with some of the reduced cider mixture and grill until nearly opaque, 1 to 2 more minutes. Flip the skewers again and brush with more sauce; repeat this process twice more. Remove from the grill.
Add the apple, kohlrabi, red onion and lettuce to the large bowl with the dressing, tossing to coat. Add half of the panko mixture and toss. Divide the salad among 4 plates and top with the remaining panko. Serve with the shrimp skewers.
