With a smooth and tangy filling and a crunchy walnut topping, these blue cheese-stuffed dates offer a bite that’s both savory and sweet. They’re an excellent alternative to deviled eggs – even easier to prepare (no cooking!), but with a more unexpected flavor combination. Cottage cheese tempers the blue cheese and adds a little protein to each bite.

Special equipment:
a mini food processor; a piping bag or resealable plastic bag
Combine the blue cheese, cottage cheese and cream in a mini food processor and process until smooth, adding a little more cream if the mixture is still crumbly.
Transfer the filling to a piping bag or resealable plastic bag and cut about 1/4 inch off the tip or corner. Pipe the filling into the date halves.
Toss together the walnuts and parsley in a small bowl. Sprinkle the mixture on the filling. Arrange the stuffed dates on a serving platter and drizzle with honey if desired.
