We love dates and are always looking for ways to use them in our weeknight recipes. This carrot side simply involves roasting spice-rubbed carrots and red onions until charred and tender. To finish, they are topped with a sweet and sour mixture of dates simmered with honey and sherry vinegar.

Directions
Halve 1 1/2 pounds carrots lengthwise, then cut into pieces. Toss with 1 sliced red onion, 3 tablespoons olive oil and 3/4 teaspoon each kosher salt and ground coriander. Roast on a preheated baking sheet at 450 degrees F until tender, 25 minutes. Cook 3 tablespoons each honey and sherry vinegar and 4 chopped pitted dates over medium heat until syrupy, 5 minutes. Spoon over the vegetables.
