Halvah-Stuffed Dates with Pistachios

Not only are these dates ridiculously easy to prepare, making them perfect for a novice cook, they could not be more impressive or crowd-pleasing to serve or gift. Feel free to experiment with different flavors of halvah or types of chocolate too!

  1. Line a baking sheet with parchment paper. Split the dates lengthwise with a paring knife, slicing only halfway through. Gently open them slightly like a book. Scoop small teaspoon-size balls of halvah and press them into each date, closing the date and returning it to its natural shape. Arrange the stuffed dates on the baking sheet and refrigerate 20 to 30 minutes.
  2. Combine the white chocolate and coconut oil in a heatproof bowl. Set over a saucepan of simmering water (do not let the bowl touch the water). Let the white chocolate melt, then gently stir until smooth. Remove the bowl from the pan.
  3. Working in batches of 4 or 5 dates at a time, transfer the dates to the white chocolate, then lift out using a fork, letting the excess drip off. Return the dates to the baking sheet and sprinkle with pistachios. Repeat with the remaining dates. If the white chocolate becomes too thick for dipping, return the bowl to the pan of simmering water to melt.
  4. Refrigerate the dates until the white chocolate is set, at least 20 minutes. To store, arrange in an airtight container between layers of parchment paper and refrigerate up to 1 week.
