We tested a number of different methods to bring you the most perfect, soft, tender eggs with rich buttery flavor. Prep the bread. Toast a sliced English muffin to your desired doneness. Set aside.

Whisk the eggs. In a medium bowl, beat two eggs with a pinch of salt until smooth (a streak of whites is okay).

Cook the eggs. For the best and nuttiest flavor, use butter rather than oil and heat it in a medium nonstick skillet. Pour the beaten eggs into the hot skillet and let cook until almost set.

Add the cheese. Turn the cooked eggs over with a spatula and place the cheese in the middle of the egg, which results in an extra cheesy bite. Fold the outer edges of the egg in towards the middle to encase the cheese and form a small square. Cook very briefly — just until the egg is golden.

Stack the sandwich. Slide the cheesy egg onto half of the toasted English muffin, then top with a cooked sausage patty, any desired toppings that you want to add like hot sauce or ketchup, and the remaining English muffin half. Serve while warm.

Ingredient Swaps

The protein: A savory sausage patty completes our version of this breakfast egg sandwich, but feel free to swap in different proteins. Crispy bacon or ham work well here, but you can also omit the meat for a vegetarian-friendly sandwich.

The cheese: Additionally, feel free to swap in your favorite cheese; we think that melty cheeses like Monterey Jack, pepper jack and cheddar work best.

The toppings: Top it with hot sauce, ketchup or your preferred condiment.

How to Store Easy Breakfast Sandwiches

While these egg sandwiches are best enjoyed immediately, you can wrap them in a sheet of aluminum foil to bring on the go. The foil will help trap in the heat from the sandwich and keep everything warm and toasty.

What Is the Secret to a Perfect Egg Sandwich?

The best breakfast sandwich relies on high-quality ingredients like pasteurized eggs, thick-cut ham or bacon and a craggy English muffin. But the real secret is all in the egg.

“I tested adding different ingredients into the beaten eggs such as cornstarch slurry, vegetable oil, or a touch of sugar (giving a nod to a Hong Kong-style egg sandwich),” explains recipe developer Andy Liang. “While the cornstarch slurry did result in eggs with a pillowy texture and no starchy flavory, the difference, in our opinion, wasn’t worth the added ingredient and step.”

The eggs in these breakfast sandwiches should be cooked until they’re lightly browned and still tender with a slice of cheese in the middle. Not only does this method work the best, but it was also the easiest method we tested.

Additionally, feel free to swap in your favorite cheese; we like melty cheeses like Monterey Jack, pepper Jack and cheddar. Top it with hot sauce, ketchup or your preferred condiment.

  1. Beat the eggs and a pinch of salt in a medium bowl with a fork until smooth (a streak of whites is okay). Heat a medium nonstick skillet over medium heat with enough butter to lightly coat the bottom of the skillet (about 1 teaspoon) until the butter is melted and the skillet is heated, about 30 seconds. Pour in the beaten egg and swirl the skillet to evenly distribute. Cook until almost set, about 1 minute. Turn over with a spatula and place the cheese in the middle of the egg. Fold the outer edges of the egg in towards the middle to encase the cheese and form a small square. Cook until golden, about 10 seconds. Slide the egg onto half of the English muffin, then top with the sausage and remaining English muffin half. Enjoy immediately.
