This no-cook appetizer takes all the best components of an antipasto platter, tosses them together and spoons them over a log of tart, creamy young goat cheese. This is best served at room temperature to let all of the flavors shine through.

Directions
Slice a 10-ounce log goat cheese into rounds and arrange in a bowl or on a platter. Chop 2 ounces sliced Genoa salami, 1 cup drained giardiniera, 1/4 cup each drained marinated artichoke quarters and drained sun-dried tomatoes in oil and 2 tablespoons fresh parsley. Serve over rounds of goat cheese with pita chips or bread.
