Grain bowls are a solid weeknight go-to, and this vibrant version is a perfect way to brighten up the meal rotation thanks to a super delicious and versatile green goddess dressing. The dressing can be made with any fresh herbs you have at home and this one includes Greek yogurt which makes it extra creamy and adds a boost of protein. Cubing the salmon helps it cook evenly, and it’s complemented by bouncy, chewy pearled farro and sweet roasted delicata squash. Feel free to swap in your grain of choice and favorite seasonal vegetables to enjoy this high-protein bowl year-round.

Directions

  1. Place a rimmed baking sheet in the oven and preheat the oven to 425 degrees F.
  2. For the green goddess dressing: Add the basil, dill, parsley, yogurt, chives, mayonnaise, lemon zest and juice, vinegar, capers, sugar, garlic, anchovy and 3/4 teaspoon salt to a blender. Puree, stopping and scraping down the sides with a spatula as needed, until smooth.
  3. Add the kale and 1/4 cup of the dressing to a large bowl and massage the kale until well dressed. Refrigerate both the dressed kale and remaining dressing until ready to serve.
  4. For the farro: Bring the broth to a boil in a medium pot over medium-high heat. Stir in the farro, 1/2 teaspoon salt and few cracks of pepper. Cover, lower the heat to a simmer and cook until the farro is tender and has absorbed the liquid, about 25 minutes (or cook according to package instructions). Reserve the pot off heat until ready to serve. 
  5. For the salmon and squash: Meanwhile, mix together the garlic powder, mustard powder, cayenne, paprika and 1 1/2 teaspoons salt in a small bowl. Toss together the salmon, 1 tablespoon of the olive oil and half of the seasoning mixture in a medium bowl. Toss together the squash, remaining 1 tablespoon olive oil and remaining seasoning mixture in a second medium bowl.
  6. Remove the rimmed baking sheet carefully from the oven and add the salmon to one side and the squash to the other side in a single layer. Cook, tossing halfway through, until the salmon is cooked to medium, 10 to 15 minutes (cook shorter or longer for preferred doneness). 
  7. Stir the cashews and parsley into the farro and divide among 4 serving bowls. Divide the salmon, squash and kale among the bowls and drizzle or spoon over the green goddess dressing (or serve on the side). Serve with lemon wedges for squeezing.
