Instead of baking brie, try warming a whole wheel on the grill for a crowd-pleasing party appetizer. The rind acts as a natural wrapper, protecting the cheese as it develops smoky flavor and charred grill marks while the center becomes soft and molten. Topped with grilled figs and a warm honey drizzle with almonds and sesame seeds, it’s a perfect balance of creamy, crunchy, sweet and savory. Serve the cheese straight from the grill with plenty of bread for scooping.

Directions
Preheat a grill to medium-high. Put the almonds in a small saucepan and place over medium heat. Toast, shaking frequently, until just starting to brown, 2 to 4 minutes. Add the sesame seeds and continue toasting until lightly browned, about 1 minute (they will continue to brown as they sit). Remove from the heat and let cool slightly. Stir in 3 tablespoons honey and a pinch of salt; set aside.
Toss the halved figs with the olive oil, the remaining 2 teaspoons honey, the thyme and a pinch of salt in a small bowl. Grill the figs until well marked, about 1 minute per side. Remove to the same bowl. Add the vinegar and gently stir; set aside.
Grill the wheel of Brie until well marked and the cheese feels soft and gooey when pressed, 3 to 5 minutes per side. Remove to a board or serving plate. Heat the nut-honey mixture over low heat until the honey is runny, about 1 minute, then pour over the cheese. Top with the figs and sprinkle with thyme. Serve with baguette slices.
