This version of Peru’s famous pollo alla brasa is inspired by the one served at New York’s popular Peruvian restaurant chain Pio Pio. While traditionally the chicken is cooked whole on a rotisserie, we spatchcock it by removing the bird’s backbone and flattening it to make it faster and easier to grill at home. This also helps the marinade of lime juice, garlic, soy sauce, aji amarillo paste and cumin soak into the chicken quickly and evenly. The result is burnished skin, juicy and flavorful meat and lightly smoky depth that defines the dish. A creamy, slightly spicy sauce of aji verde (green chile) and lots of cilantro is the classic bright and herby contrast to the mouthwatering chicken. It’s a backyard-friendly route to memorable Peruvian flavor.
For the chicken: Spatchcock the chicken by using strong kitchen scissors or poultry shears to cut down either side of the backbone. Remove the backbone, turn the chicken over and press down on the breast of the chicken to crack the breastbone. Press to flatten the chicken out evenly. Sprinkle the chicken on both sides with 3/4 teaspoon kosher salt and a few cracks of black pepper.
Whisk the lime juice, garlic, soy sauce, aji amarillo paste, cumin, brown sugar and paprika in a large bowl until combined. Toss the chicken with the marinade until evenly coated. Set the chicken skin-side down back in the bowl, making sure some marinade coats the other side as well. Cover and refrigerate for at least 1 hour and up to 4 hours (see Cook’s Note).
Meanwhile, for the green sauce: Blend the cilantro, scallions, jalapeños, garlic, mint, mayonnaise, sour cream, lime juice, aji amarillo paste, 3/4 teaspoon salt and few cracks of black pepper together in a high-speed blender on medium-high speed until smooth and bright green. Pour into a large bowl and refrigerate, covered, until needed or up to 3 days.
Prepare a grill for medium indirect heat. For gas grills (3 or more burners): Turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills: Bank one chimney starter filled with lit and ashed-over charcoal briquettes to one side of the grill; set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer’s guide for best results.)
Remove the chicken from the marinade and brush on both sides with the oil. Place the chicken skin-side up on the indirect side of the grill with the legs facing the hotter side. Cover the grill and cook until an instant-read thermometer inserted in the thickest part of the thigh (avoiding the bone) registers 150 to 160 degrees F (almost cooked through), 50 minutes to 1 hour.
Move the chicken over to the direct-heat side of the grill. After 2 minutes, flip the chicken to char and crisp the skin side, 2 to 3 minutes. Check the temperature at the thickest part of the thigh again. It should register at least 165 degrees F; if not, move the chicken skin-side up back to the indirect side, cover and cook until it registers 165 degrees F.
Remove the chicken from the grill and let rest 20 minutes. Carve the chicken and serve with the green sauce on the side.
Cook’s Note
Try not to marinate the chicken longer than 4 hours as it may affect the texture of the meat, turning it soft or mushy rather than tender.
