These healthy key lime bars deliver all the tropical tang and creamy sweetness you crave, but with a secret ingredient that seriously boosts nutrition: cottage cheese. Forget the heavy cream and condensed milk; cottage cheese is blended until smooth to create a high-protein, surprisingly light filling that still sets up perfectly firm. Nestled on a simple, buttery graham cracker crust, these bars are bright, refreshing and lower in sugar and saturated fat than traditional versions.

  1. Preheat the oven to 350 degrees F. Line an 8-inch square pan with parchment, leaving about 2 inches of overhang on all sides.
  2. For the crust: Combine the graham cracker crumbs, melted butter, brown sugar and lime zest in a large bowl until the consistency of wet sand. Transfer to the prepared pan and flatten to an even layer. Bake until golden brown, 10 to 15 minutes. Let cool to room temperature while you prepare the topping.
  3. For the topping: Stir together the gelatin and 2 teaspoons of water in a small microwave-safe bowl and let bloom for 5 minutes.
  4. Add the Neufchatel cheese, cottage cheese, brown sugar, key lime juice and vanilla to a food processor and blend until smooth, about 2 minutes. Microwave the gelatin until melted, about 10 seconds, then add to the food processor with the lime zest. Blend until evenly combined.
  5. Spoon the topping over the cooled crust and smooth into an even layer. Cover and refrigerate at least 4 hours and up to overnight. Serve chilled.
