This ham and cheese fondue, flavored with mustard and thyme, is an elegant starter to serve with cocktails. Serve the dip from a small skillet or serving bowl, surrounded by sliced bread and assorted colorful crudités.

Directions
Melt the butter in a medium saucepan over medium heat. Add the ham, shallot, garlic and thyme and cook, stirring, until softened, 2 to 3 minutes.
Stir in the flour. Whisk in the milk and wine and bring to a gentle simmer. Whisk in the cream cheese and mixed cheeses, the mustard, a pinch of salt and the cayenne until creamy and smooth.
Transfer the dip to a small baking dish or serving bowl and sprinkle with thyme and chives. Serve with sliced baguette and/or apples.
