Loaded Cake Mix Cookies

Cake mix is the secret shortcut to light, fluffy cookies. Crispy cornflakes, pretzels and big chunks of dark chocolate give these an irresistible combination of crunch and gooiness -- and we also added sprinkles, just for fun!

One 15.25-ounce box yellow cake mix

2 large eggs, lightly beaten

5 tablespoons unsalted butter, melted

2 cups dark chocolate chunks or discs

1/4 cup rainbow sprinkles

1/2 cup cornflakes

1/2 cup crushed pretzels


  1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
  2. Stir together the cake mix, eggs, butter and 1/4 cup water in a large bowl with a wooden spoon or rubber spatula until smooth and combined. Stir in the chocolate and sprinkles until they are completely coated, then gently fold in the cornflakes and pretzels. 
  3. Scoop the dough onto the lined baking sheets using a 2-ounce ice cream scoop or a large spoon, about 2 inches apart (6 per sheet). Bake, rotating and switching the positions of the baking sheets halfway through, until the cookies start to turn golden brown on top, 8 to 10 minutes Repeat with the remaining cookie dough. 
  4. Let cool slightly and serve, or cool completely and store in an airtight container up to 5 days.
