Masala Pistachio Snack Mix

This snack mix has it all: peanuts, pistachios, potato chips, pretzels, corn nuts, dried mango and a masala-coconut seasoning.

Ingredients

Masala Spice Blend:

1/4 cup unsweetened flaked coconut

3 tablespoons sugar

2 teaspoons garam masala

1 teaspoon curry powder

1/2 teaspoon ground turmeric, optional

Kosher salt

Nuts:

Vegetable or canola oil, for the baking sheet

1 large egg white

1 cup unsalted raw peanuts

3 cups unsalted raw pistachios

1 cup mini pretzels

1 cup potato chips

1/2 cup corn nuts

Assembly:

1/2 cup chopped dried mango

Directions

  1. Mix together the coconut, sugar, garam masala, curry powder, turmeric if using and 1 1/2 teaspoons salt in a small bowl and set aside.

For the nuts: 

  1. Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet with the oil.
  2. Put the egg white in a large bowl and whisk until frothy. Add the peanuts, pistachios, pretzels, chips and corn nuts and toss to coat in the egg white. Add the spice blend and toss to coat.
  3. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet.

For the assembly:

  1. Stir the mango into the nut mix and transfer to a large bowl.
