This fun take on mozzarella sticks replaces breadcrumbs with ground matzo mixed with Parmesan and herbs. It creates a golden, crispy coating for string cheese, which we dip in a tomato sauce flavored with smoky paprika and a touch of sherry vinegar.
Dredge 8 pieces string cheese in potato flour, dip in beaten egg, then coat with 1 cup ground matzo mixed with 2 tablespoons each grated Parmesan and minced cilantro. Deep-fry in 350 degrees F vegetable oil until golden, 2 to 3 minutes. Serve with marinara sauce.
