Mayo Brussels Sprouts

Mayonnaise is the surprising secret to making perhaps the crispiest Brussels sprouts ever. It even beats olive oil because the oil in mayonnaise has a higher smoke point and can take on very high heat without becoming bitter. We added Dijon, garlic, maple syrup and thyme and just a hint of cayenne to make our sprouts extra delicious. When tossing the Brussels sprouts with the mayo, go ahead and be rough! The best pieces are the leaves that fall off and get extra dark and crispy in the oven.

  1. Arrange racks in the top and bottom thirds of the oven and preheat to 500 degrees F.
  2. Place the Brussels sprouts in a large bowl and shake them up to let loose the outer leaves.
  3. Stir together the mayonnaise, Dijon, thyme, maple syrup, garlic, 1 1/4 teaspoons salt, a few grinds of pepper and the cayenne if using in a small bowl. Add the mayonnaise mixture to the Brussels sprouts and toss to coat. Do not be gentle! The more leaves that fall off the sprouts, the better. Spread the Brussels sprouts on two baking sheets.
  4. Roast for 10 minutes, then toss the sprouts with a metal spatula and swap the baking sheets.
  5. Continue to roast until the sprouts are tender and the loose leaves are dark and crispy, 10 to 15 minutes more.

Cook’s Note

Use mayonnaise that does not have an olive oil base.
