Directions
Combine the cranberries, 1 cup turbinado sugar, the whiskey, orange juice, 1/4 teaspoon salt and 1/2 cup water in a medium saucepan. Bring to a boil, reduce to a simmer and cook until the cranberries pop, stirring and smashing occasionally with a wooden spoon, 10 to 12 minutes. Remove from the heat and stir in the bitters. Transfer to a bowl and let cool to room temperature; the juices will thicken as the sauce cools. Refrigerate until cold, at least 2 hours.
Meanwhile, thinly slice the strips of orange zest. Transfer to a small saucepan and cover with cold water; bring to a boil, then remove from the heat and strain. Repeat this process, then return the zest to the saucepan again. Add 3/4 cup water and 4 tablespoons sugar; bring to a boil, then reduce to a gentle simmer and cook until the zest has softened and the liquid is syrupy, 12 to 15 minutes. Remove the zest with a fork and spread out on a plate to cool. Sprinkle with the remaining 1 tablespoon sugar; set aside to cool completely.
Transfer the cranberry sauce to a serving bowl and top with the candied zest.
