Directions
Steep 8 white tea bags in 6 cups boiling water, 8 minutes. Discard the tea bags; chill the tea. Meanwhile, bring 2/3 cup each water, sugar and lemon thyme sprigs to a simmer in a saucepan, stirring to dissolve the sugar. Let cool, then strain and chill. Puree 1 chopped peach in a blender with the tea, thyme syrup and 3 tablespoons lemon juice. Strain into a pitcher and add 1 cup gin. Pour into 4 tall ice-filled glasses and garnish with lemon slices.
Cook’s Note
For a mocktail version, simply leave out the alcohol. It tastes great as a regular iced tea drink.
