Chocolate truffles are a special treat, and they couldn’t be simpler to make — or to customize. Hot heavy cream is poured over chopped chocolate to melt. Stir in peppermint extract to achieve that classic flavor of chocolate and mint, along with crushed candy canes for pop of peppermint crunch. Once chilled, roll the mixture into balls, then coat in colorful sugar or more crushed candy canes.

Directions
Put the chocolate in a medium bowl. Bring the heavy cream and butter to a boil in a small saucepan, then pour over the chocolate and let sit 5 minutes. Stir in the peppermint extract until smooth, then stir in the candy canes. Refrigerate until firm, 1 to 2 hours.
Add the crushed candy canes and red coarse sugar to separate plates. Scoop tablespoonfuls of the chocolate mixture and roll into balls, then roll in the crushed candy or sugar to coat. Put the truffles on a plate and refrigerate until set, 1 to 2 hours.
