Pie Iron Chocolate and Banana Stuffed Pancakes

Camping staples--chocolate bars and bananas--can go from s’mores and trail snacks to the delicious filling for these decadent pancakes. You can use any pancake batter you like. We opted for boxed mix for the sake of convenience—always a plus when cooking over a campfire.



Special equipment:
a 4- to 5-inch square pie iron
  1. Build a campfire.
  2. Spray or coat the inside of both sides of a 4- to 5-inch square pie iron with cooking spray to prevent sticking.
  3. Prepare the pancake batter according to the package instructions. Spoon about 3 tablespoons pancake batter into 1 side of the pie iron, then add 3 to 4 slices of banana and 1 square of chocolate to the center. Top with about another 2 tablespoons batter, making sure the chocolate and bananas are covered. Carefully attach the other side of the pie iron, making sure not to spill the batter.
  4. Cook over the fire, batter-side down, until the sides are puffy and only a little wet batter is visible in the middle when you check, about 3 minutes (depending on the heat of your fire). Flip the pie iron and cook on the other side until golden, about 2 minutes. Carefully unmold onto a plate and top with syrup, confectioners' sugar and more banana slices. Repeat with the remaining ingredients.
