Pineapple, Peach and Coconut Crumble

This tropical crumble marries fresh summer peaches with pineapple, rum and lime juice and features a fragrant coconut crumb topping. What could be better than a scoop of rum raisin or coconut ice cream to top things off?

  1. Make the topping: Preheat the oven to 375 degrees F. Stir together the flour, brown sugar, shredded coconut, pecans and salt in a large bowl until evenly combined. Rub in the butter with your fingers until crumbs form. Toss in the coconut flakes at the end. Freeze the topping until firm, at least 15 minutes.
  2. Meanwhile, make the filling: Stir together the pineapple, peaches, brown sugar, rum, lime juice, cornstarch, salt, cinnamon and nutmeg in another large bowl until evenly coated and juicy. Scrape into a 2-quart baking dish. Dot with the butter, then scatter the crumb topping over the top.
  3. Bake until the topping is golden brown and the filling is bubbling around the edges, 40 to 45 minutes. Let the crumble cool at least 30 minutes. Serve with ice cream.

Cook’s Note

You can also use frozen peaches for this recipe. Thaw completely, then drain and blot dry before using.
