Directions
Toss the cucumbers in a small bowl with the lime juice, 1 tablespoon chili sauce, a pinch of salt and a few grinds of pepper. Set aside while you make the burgers, stirring occasionally.
Combine the ground chicken, breadcrumbs, carrot, curry paste, lime zest, remaining 2 tablespoons chili sauce, the mayonnaise, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Mix with your hands, then form into four 1/2-inch-thick patties.
Heat a large nonstick skillet over medium-low heat and add the vegetable oil. Add the patties and cook until browned and cooked through, 5 to 6 minutes per side.
Assemble the burgers: Spread the bun tops with mayonnaise. Set the patties on the bun bottoms, then top with the cucumbers and the bun tops. Serve with sweet potato chips.
