This vibrant, healthy and satisfying lentil soup is packed with eight vegetables (10 if you include the herbs) and gets its fresh flavor from tomatillos and cilantro. Tender green lentils provide a hearty base, and there’s a little heat from jalapeño and poblano. The finishing touch of baby spinach, sweet peas and lime juice guarantees each bite is beautifully green and bright.

Directions
Heat the oil in a large pot or Dutch oven over medium-high heat. Add the celery, finely diced onion, 1/4 teaspoon salt and several grinds of pepper and cook, stirring occasionally, until the vegetables are tender and translucent, about 4 minutes.
Meanwhile, add the tomatillos, cilantro, oregano, garlic, jalapeño, poblano, coarsely chopped onion and 1 cup of the vegetable broth to a blender and blend on high until very smooth.
Pour the tomatillo mixture into the pot, then add the lentils, bay leaf, 1 teaspoon salt, several grinds of pepper, remaining 3 cups vegetable broth and 4 cups water. Bring to a simmer, then reduce the heat to low. Simmer until the lentils are just tender and the broth has thickened slightly, about 15 minutes.
Stir in the spinach, peas and lime juice. Cook until the peas are warmed through and the spinach is wilted, about 1 minute. Taste and adjust the seasoning with salt and pepper.
Ladle into bowls and top with more cilantro. Serve with lime wedges on the side for squeezing.
