1 tablespoon coriander seeds

2 teaspoons cumin seeds

1 tablespoon green or white cardamom pods

1 (3-inch) cinnamon stick, crushed

1/4 teaspoon whole black peppercorns


  1. Toast coriander and cumin seeds in a dry small heavy skillet over moderate heat, stirring occasionally, until fragrant, about 2 minutes. Cool, then finely grind with remaining spices in an electric coffee/spice grinder or with a mortar and pestle.;
