This quick and easy microwave mushroom toast is a perfect breakfast or lunch for one. The key is to microwave the mushrooms in 30-second intervals so that the liquid evaporates slowly, but the mushrooms don't overcook. The creamy goat cheese spread and bounty of fresh herbs are the perfect pair for the savory mushroom mixture.

Directions
For the toast: In a small bowl, combine the goat cheese, herbs and shallots and mix to combine. Set aside.
Butter or oil both sides of the bread and toast on a skillet set over medium heat until golden brown, 3 to 4 minutes per side. Lightly sprinkle the bread with salt on both sides.
For the mushrooms: In a medium bowl, combine the mushrooms, olive oil, thyme, vinegar and Fresno. Stir to coat the mushrooms. Microwave in 1-minute increments, stirring after each minute, and pouring off liquid at 3 minutes, for 5 1/2 minutes total. (You might have to remove a little more excess liquid if there is still a lot after 5 minutes total microwave time.)
Season the mushrooms and stir in the chives and shallots.
Spread about 3 tablespoons of the goat cheese mixture on the toast and top with the mushroom mixture, more chives and a drizzle of olive oil.
