3 cups shredded rotisserie chicken

1 cup store-bought refrigerated guacamole 

1/2 cup peeled small diced fresh mango 

1/2 cup finely diced red onion 

1/2 cup toasted pepitas 

1 tablespoon fresh lime juice 

1 tablespoon store-bought refrigerated pesto 

Kosher salt and freshly ground black pepper 

Lettuce leaves (such as Bibb) or flatbread, for serving 


  1. Combine the chicken, guacamole, mango, onion, pepitas, lime juice and pesto in a mixing bowl, then season to taste with salt and pepper. Serve with lettuce leaves or flatbread for easy eating.
