There’s nothing like a classic cocktail, served in a classic glass, but with a modern spin on it. The ginger syrup is so wonderful and can be used on oatmeal, ice cream, fruit salad or added to a vinaigrette.

Directions
For the fresh ginger syrup: In a small pot, add the sugars, ginger and 1 cup water and bring to a simmer over medium heat until the sugar dissolves, about 20 minutes. Take off the heat and let it cool down and steep. Once it’s at room temperature, transfer to a blender to blend until smooth, then strain over a fine mesh sieve into a bowl. Transfer to a glass container and shake before using. Store in the fridge for 1 week.
For the ginger mint highball: In a highball glass full of ice, add the whiskey, lime juice and 2 ounces ginger syrup and stir with a long spoon about 10 times (save the remaining ginger syrup for another use). Top off with the soda water and stir a couple more times. Garnish with fresh mint.
