Poblano Mezquila Julep

I’m a sucker for a refreshing tequila cocktail. This one features the smoky flavor and spice of charred poblano peppers infused in honey and julep-like flavor from fresh mint. You can use leftover charred peppers from another recipe, or make extras if you’re roasting them for another dish.

Poblano Honey:

Directions

  1. Fill 4 glasses with ice. In a jar or shaker filled with more ice, shake together the Mezquila, lime juice, Poblano Honey and 4 of the mint leaves. Strain the liquid into the glasses. Garnish with the remaining mint and top with a splash of sparkling water.

Poblano Honey:

  1. Warm the honey, vinegar and charred poblano peppers until just about to boil. Remove from the heat and steep for 10 minutes. Strain out and discard the poblano pieces.
