Creamy Sage Baked Ravioli

This is an ideal way to elevate a store-bought package of stuffed ravioli. The pepperoni, sage and ciabatta topping adds so much flavor and is worth remembering as a topping for some of your other recipes.

  1. Preheat the oven to 375 degrees F.
  2. Place a large ovenproof skillet over medium heat and add the pepperoni with 1 tablespoon olive oil. Cook the pepperoni to begin rendering the fat, 1 to 2 minutes. Add the ciabatta and a pinch of the chopped sage, then toss to coat the bread in the fat. Remove the mixture from the skillet and set aside.
  3. Return the skillet to the heat and add the butter and remaining 2 tablespoons olive oil. Add the onion, garlic and remaining sage. Cook for a few minutes to soften the vegetables. Season with a good pinch of salt and pepper.
  4. Sprinkle over the flour and stir to combine. Let the flour cook for a minute, then whisk in the chicken broth until you have a smooth sauce. Add the cream and bring to a boil. Stir in the ravioli and sprinkle over the Gruyère. Top with the pepperoni and breadcrumb topping.
  5. Transfer to the oven and bake until the sauce has thickened slightly, the cheese has melted and the bread topping has toasted, 12 to 14 minutes.
  6. Allow to sit for 5 minutes, then garnish with the parsley and serve.
