This salad is great for entertaining. It’s colorful, has a zingy blend of flavor profiles, and even uses fancy champagne vinegar, for a little taste of luxury.

Directions
For the dressing: Segment the oranges in a sieve over a bowl, reserving the juices.
In a jar, add the olive oil, oregano, vinegar, honey, Dijon mustard, garlic, salt, pepper and reserved 1/4 cup citrus juice, then cover and shake until combined. Pour the salad dressing into the bottom of a salad bowl.
For the salad: Top the dressing with the jarred peppers and olives before adding the orange segments, kale, romano and pine nuts. Toss well just before serving.
