Nut Granola Parfait

This high-protein dish is perfect for breakfast or a snack. The homemade granola is naturally sweetened with maple syrup, and, what’s more, it’s easy to make and lasts for several days.

  1. Add 1/2 cup yogurt to a parfait glass or mason jar, then drizzle with 1 tablespoon honey and top with 1/4 cup Granola. Repeat the layers once more, then garnish with the mint leaves and berries.

Nut Granola:

Yield: 5 cups (10 servings)
  1. Preheat the oven to 325 degrees F.
  2. Mix the maple syrup, coconut oil, vanilla bean paste and cinnamon in a large bowl.
  3. Add the nuts, seeds and flaked coconut, tossing them to fully coat. Spread in an even layer on a sheet pan and bake until golden, 25 to 30 minutes. Sprinkle the sea salt over the top, then let cool. Break into pieces.
  4. Place in an airtight container, where it will keep for up to 1 week.
